The #TeamPancake VS #TeamWaffle Tag + My Best-Ever Waffle Recipe!


There are two kinds of people in the world: those who love waffles and those who love pancakes. (And then there are the fence-sitters, who need panffles. Obviously.) So once upon a time, the brilliant Olivia Knight said on Twitter that she wanted waffles. And a complete waffles vs pancake war commenced. (Why yes, we are a fabulous tribe do join us.) Then the brilliant Rachel Alison started this tag to see how we shall all take sides. AND YOU GUYS KNOW ME. I COULD NEVER PASS UP THE CHANCE TO TALK THIS MUCH ABOUT WAFFLES.

I’M OBVIOUSLY GOING WITH WAFFLES HERE, GUYS. (But if you’re into pancakes* then just switcharoo the questions to make more sense to you – although pancakes don’t make sense to me so hA.)

DESCRIBE YOUR IDEAL WAFFLE IN THREE WORDS.

OH MAN JUST THREE? Come on, people. I used to have a food blog. That chapter of my life was basically composed of describing food, so limiting myself to just three adjectives right now is actually really hard. OKAY HOW ABOUT: Fluffy, light, and healthy. (I’m very pleased to tell you that my waffle recipe below is conveniently all three. YAY!)



IF YOU COULD EAT WAFFLES WITH ANYONE IN THE WORLD, LIVING OR DEAD, FICTIONAL OR REAL, WHO WOULD YOU WANT TO EAT WITH?

Hmm you didn’t say one person, so I’m going to pick several: the Pevensie children. I mean I know they were into toast?? BUT WAFFLES CAN ALSO BE EATEN WITH JAM AND LOVELY TOASTY THINGS. Which leads us to…


TOP THREE CONDIMENTS TO PUT ON YOUR WAFFLES?

  1. REAL maple syrup (that’s right, I’m a Vermont baby. get your corn syrup out of my face.)
  2. Blueberry preserves (because blueberries obvs.)
  3. CHOCOLAAAAATE (because.)


DESCRIBE WHY YOU THINK WHY WAFFLES ARE BETTER THAN THE OTHER OPTION.

Waffles are practically heaven in an edible reality. OKAY SO I KNOW THAT’S NOT HARD SCIENCE, BUT HEAR ME OUT. Waffles have all these adorable little crevasses to fill with yummy condiments and such. They are basically asking to be pretty. And who wouldn’t like a food item that is asking to be pretty? ALSO ALSO waffles come out aesthetically pleasing every time, unlike pancakes which are pesky little monsters who like to stick to pans, break, and not flip properly. Waffles are stress-free. Waffles make me feel relaxed. Waffles make me feel like I’m home.



IF YOU COULD MAKE YOUR WAFFLES INTO ANY SHAPE OR SIZE, HOW WOULD YOU MAKE THEM?

Probably heart shaped because that’s cute and I’ve been awake for too long to think of something more creative, to be honest.

THE BEST WAFFLES EVER OKAY

So these waffles, I am told, and I believe wholeheartedly, are the best waffles in the world. They are super flavorful, light, fluffy, crisp and buttery on the edges, YET gluten-free, dairy-free, egg-free, 30 minutes start to finish, and THE BEST EVER. They technically health food but you know...I can’t get carried away with my descriptions here.

These aren’t your run-of-the-mill waffles (no they’re so much better) so you might see a few things in the ingredients that you aren’t familiar with. BUT! If you’re reading my blog then you’re probably homeschooled and if you’re homeschooled than you’ve probably been to a co-op/health food store and have seen these ingredients. IF SO, go get some stuff and MAKE THESE WAFFLES. You will never go back to another waffle (or pancake HA) recipe again. ;)



INGREDIENTS:

1 1/4 cup milk (or non-dairy milk) + 1 tbsp white or apple cider vinegar
1/4 cup coconut oil, melted
1/4 cup maple syrup or honey
1 tsp vanilla extract
1/2 cup rolled oats
1 tbsp ground flaxseed
1 3/4 cups this gluten free flour blend (seriously – nothing else works trust me)
1 1/2 tsp baking powder
Pinch of sea salt
Pinch of cinnamon (optional)


DIRECTIONS:

In a measuring cup, stir milk and vinegar and let sit for a few minutes to curdle.
In a large mixing bowl, whisk together flour blend, rolled oats, baking powder, salt, cinnamon, and flaxseed. Set aside.
In a separate bowl, whisk together milk with maple syrup, coconut oil and vanilla extract. Add the dry ingredients to the wet ingredients and whisk until combined and smooth (though the batter will be a bit lumpy from the oats – don’t worry, they melt away during the cooking process.)
Let the batter sit for 5-10 minutes while your waffle iron preheats. Once your waffle iron is ready to go, coat each plate with cooking spray and pour on about 1/3 cup of batter (this depends on the size of your waffle maker.) Cook according to manufacturer instructions.
You can place the waffles in a 200 degree oven to keep warm, or devour immediately and mercilessly (aka let other people cook their own waffles for gosh sakes.) You can keep leftover waffles (like if there even are any) in a ziplock bag in the freezer (for a couple of months) and reheat them in the toaster. Always, always, always top with real maple syrup.

This recipe is adapted slightly from Minimalist Baker. (Also you need to follow their blog because like FOOD.)

    (So, um, I was up until 2:30 writing today's blog post - and needless to say, I just woke up, hungry. And then my email dinged with this and it made my day.)

    I am TOTALLY making these waffles right NOW. My brother's been everything-free, so I'm really used to the healfulness that comes with avoiding dairy, gluten, etc, though he's off more than those right now. XD Struggle's real.   12. YES I'M TEAM WAFFLE!!!! Because, like you said, they are panic free. They don't need to be flipped. They don't take on weird shapes. I mean, pancakes need to be round, bUT ARE THEY EVER??? NO. Pancakes are cruel sticky beasts. And also topping just runs right off them and messy. Nopity no. Waffles have those nice little boxes that you can fill with delicious things. Im very partial to lemon curd (or like lemon butter?? Idek what you'd call it in America­čśé) or jam on my waffles. AND I USED TO LOVE NUTELLA BUT THE UNIVERSE HATES ME AND APPARENTLY I'M ALLERGIC TO NUTS. So no nutella. But that was good. Also my sister used to do peanut butter on chocolate waffles and that weren't half bad either (until nuts started to hate me *sobs*)
    AND THAT WAFFLE RECIPE LOOKS DIVINE!!! AHHHHHH. And I love that it's GF. xD I could probably actually make and eat those.

  13. YAY #TEAMWAFFLE though, really, the decision is so difficult. I make pancakes more often since my waffles are like cooked dough (aka flat...VERY flat) but there's this small breakfast diner that used to be really close to us that made the freaking best waffles ever. Belgian waffles. OMG yeah that made the turning point for moi. But if I ever did this I'd probably stick in a pancake recipe at the end. hah. me. But yanno I should really try your recipe... it looks pretty crazy good. OH OH OH and totally random off the wall (sort of? your incredible stock-like (;) pictures reminded me of it) question, but I'm currently looking for a good lens/DSLR to invest in and i was wondering what camera you use? That's totally fine if you didn't want to say, but i was just sort of curious since i have probably like a million tabs open on canon lenses. ARGH.

      OMG I'M SO HONORED THAT YOU ASKED ME A PHOTOGRAPHY-ISH QUESTION!! EEEP! *bounces around* so I have a DSLR Canon Rebel T3i, and I lovelovelove it sooo much. I have three lenses (and a fourth one on the way asdfgfjskhd) this EFS 18-55mm f/3.5-5.6 lens, which is a nice full-range zoom lens. It came in a kit with the camera, and I use it for a lot of blog stuff/general photography. :) Then there's this EFS 50mm f/1.8 macro lens (the one I used here to take these waffle pics) it's suuuper good quality for the price and I've had it as long as I've had my camera (totally got it covered in flour a couple of times, too...oops haha) and last but not least I have this EFS 10-22mm f/3.5-4.5 USM wide angle zoom lens. It's really nice for huge landscape shots, but doesn't zoom in very far. SO YEP THAT'S THAT EEEEEP. The lens I just bought is a telephoto zoom, and I'll probably be reviewing it on the blog because EEEEP I'M EXCITED JUMPING OUTTA MY SKIN AAAAAAAAAH. <3 happy lens hunting!! :D

  15. I'm #teampanffle. Because, both waffles and pancakes: can hold maple syrup, cream and berries; can be challenging to make (I know you said waffles are easier, but - have you ever had waffles stick in the waffle maker?); and when you're starving, they're both still food right?

    Your recipe looks really nice though, and I actually have all those ingredients, so I may just try making them, and risk the waffle maker sticking and everything. If all else fails, I could just use the mix for pancakes. ;)

Although wAIT due to the strange combo of flours, (great flours btw but...strange haha) pancakes made out of this batter are actually REALLY BAD. Like they don't rise?? for some reason?? Me and my sister tried it and were gravely disappointed waa. Dx So yes -- this mix is definitely only for a waffle maker. I probably should note that in the recipe! I'M SO OUT OF PRACTICE WITH WRITING RECIPES TBH hehe

    BUT REALLY. Like you said, waffles are just /asking/ to be delicious and pretty and just plain fun. Actually... *whispers* we use pancake batter for our waffles when we make them homemade, so they don't TASTE different... but they are just so much more fun (with those awesome crevices) and pleasing to look at. Oh, and easier to make. Oh yeah.

    On July 4th, my family makes American flag waffles that we create with white yogurt, red strawberries, and blueberries. :)

    It took me three whole days to decide waffles or pancakes. But on Saturday morning i woke up and my mom made pancakes. BUT WHIPPED CREAM AND CHOCOLATE CHIPS AND UMMMMMM YUMMMMMMM I still love waffles. Love 'em to death. One time I burnt myself on a waffle maker at a hotel. Waffles don't like me anyway.
